1 kg (2 lb) green peppers, 500 g (1 lb) tomatoes; 2 small onions, 200 g (1/2 lb) spicy sausage, I50 g (6 oz) smoked bacon, 3 tsp noble sweet paprika, 2 eggs
Dice the bacon and fry over a moderate heat until transparent. Then add the finely chopped onions and fry for a few minutes. Sprinkle with the paprika and add the quartered tomatoes and sliced green peppers. Season to taste with salt, cover with a lid and cook until tender. Then add the sliced sausage and continue to simmer for a further 4-5 minutes. Finally remove the lid, turn up the heat to reduce the liquid and add the beaten eggs. Cook for a few more minutes, then serve piping hot.
